Quiche Lorraine Belle's Country Cooking Ingredients 9-inch pastry crust 3/4 cup diced onion 4 eggs 1 teaspoon salt 6 slices bacon 2 cups shredded Swiss cheese 2 cups milk 1/2 teaspoon Tobasco Directions: Prick pastry shell well with fork and bake in 425-degree oven for five minutes. Remove from oven and cool. Reset oven to 450 degrees. Fry bacon until crisp and drain off all but one tablespoon of fat. Fry onion in bacon fat until soft. Crumble bacon. Spread cheese in even layer in partly baked pastry shell. Sprinkle on the bacon and onion. Beat eggs well and add milk, salt and Tobasco. Pour into pastry shell and bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees and bake 15 minutes longer, or until center is set. Let stand 15 minutes before serving.
