lemon tofu. ingredients: olive oil 1/2 pound of firm tofu 1 clove of garlic, minced 1 medium onion, chopped 1 tbsp flour 1 tbsp nutritional yeast (I didn't have any and it turned out great anyway) 1 tsp tasty vinegar (plum, brown rice, white wine, etc) 1 1/2 tbsp tamari 1/2 tsp dried thyme 1/4 tsp black pepper 2 tbsp fresh lemon juice (or more to taste) instructions: 1.) Cut the tofu into 1/4" slices, then into 1" squares. Lightly dust the pieces with flour (and yeast, if you've got it). 2.) Saute the onions in a large skillet (cast-iron is good) for a minute or so, medium heat. Then add the garlic and the tofu pieces, and cook tofu until it's lightly crispy on both sides (about 2 minutes per side). 3.) Mix together the vinegar, soy sauce and spices, then toss it over the tofu and coat everything. Once it's absorbed, add the lemon juice, saute another 2 minutes, and serve!
