penne pasta w/ tomato vodka "cream" sauce. ingredients: 1 lb. penne pasta 3 - 14.5 oz cans of stewed tomatoes 3 1/2 cups plain soymilk 1 teaspoon salt 1 teaspoon dried basil 1/2 teaspoon dried oregano 2 tablespoons vodka freshly ground black pepper, to taste instructions: 1.) Cook soy milk on stovetop over medium heat until it reduces to 2 cups. Puree tomatoes in blender. Add milk and blend until well mixed. 2.) In a large wok (or really big pot) cook tomato mixture for 15 minutes, stirring occasionally. If it starts to sputter, turn the heat down. 3.) Add basil, salt and oregano. Cook 5 more minutes. 4.) Add vodka, simmer 5 more minutes. Lastly, add pepper. Ladle over cooked penne pasta noodles. Serves: 4
