penne with asparagus and spinach. ingredients: 2 bunches of thin aparagus 1 cup chopped fresh spinach 1 lb. of penne 2-3 cloves of garlic, pressed 1/4 cup chopped onions olive oil salt, pepper, cayenne pepper, to taste 2 1/2 cups vegetable stock instructions: 1.) steam asparagus. while the asparagus is steaming, sautee fresh garlic and onions in olive oil in a frying pan with tall sides or a sauce pot. add salt, pepper and cayenne pepper. add asparagus and sautee. 2.) add spinach and 1/2 cup of the veggie stock. cook until spinach is tender. add res of veggie stock and cook pasta directly in this. might need to add extra stock or water if pasta is not fully cooked and liquid seems to be evaporating too quickly. 3.) after pasta is cooked there should be minimal to no liquid and be ready to be served.
