sun-dried tomato ziti. ingredients: 5 cups ziti pasta (or other pasta with grooves to hold the sauce) 20-30 sun-dried tomatoes 1 can of marinated artichoke hearts, chopped 2 1/2 Tbsp. dried rosemary, crumbled 1/2 Tbsp. garlic powder or 1-2 fresh garlic cloves 1/4 cup olive oil Salt, to taste Pepper, to taste 1 Tbsp. parsley instructions: 1.) Place the pasta in a pot of boiling water and cook until just tender. 2.) While the pasta is cooking, soak the sun-dried tomatoes in hot or boiling water for approximately 15 to 20 minutes, or until soft. 3.) Chop the sun-dried tomatoes and place in a blender or food processor. 4.) Add the artichokes, rosemary, garlic powder or fresh garlic, and a few tablespoons of the olive oil and pulse until mixed but still chunky. 5.) Add the remaining oil, the salt, and the pepper and pulse until completely mixed with small chunks of tomato and olive still visible. The sauce should be somewhat thick in consistency. 6.) Drain the pasta and mix in the sauce. Garnish with the parsley and serve immediately. makes: 2 to 4 servings.
